The Topaz menu is a finely balanced meeting of creative minds, ingredients and fresh produce. Our fine dining cartes are the result of daily meetings between Papa Darc, our group executive chef, and head chef Pov Sopheak.That is where creativity leads to adjustment, refinement to haute cuisine de France with a subtle Cambodian twist.
Our beef is imported from the United States and Cape Grim, Australia, fin de Claire oysters and bouchot mussels come from France, salmon from Norway and the finest Sturia caviar from the Gironde។
Local produce is also a bonus in giving our dishes an authentically French/Cambodian taste and texture. Every day our staff scours the local street markets for freshness and that little bit of extra taste.
